From 9th to 22nd March the Restaurant will offer a special tasting menu: a trilogy of steamed asparagus, sautéed in a pan with cream; egg soft with soy asparagus, prawns, asparagus and courgettes sautéed with sliced almonds and spumone spinach with sauteed caramel.
In the “Sala le Maschere”, decorated with gilded stuccos and large mirrors typical of the great Italian eighteenth century and Venetian rococo, Chef Umberto Vezzoli proposes for the month of March the colors of spring, the “Green”: cappuccino of edamame beans, asparagus fried with artichokes mint, maltagliati with peas and lettuce shrimp, amberjack fillet with basil essence and chilli pepper, lamb shank with agretti in turmeric potato sauce and semifreddo with vanilla peas and marinated strawberries with bitter orange sauce.

L’Uliveto Restaurant stages Sunday brunch by Executive Chef Fabio Boschero between venetian masters and the royal blue pool. Fourteen corners, from antipasto to desserts, with fresh local produces and “live stations” for hot dishes. Brunch is also enriched with “Mexican Corner”, the station dedicated to Raw Foods and Detox corner with Quinoa, Spelled, Barley Salads and with selections of fresh herbs and flavors that the season offers. To complete the rich picture is the amazing dessert buffet by Executive Pastry Chef Dario Nuti.
Once a month, then, Sunday Brunch is dedicated to a particular theme: March 8th is the sunday on which International Women’s Day is celebrated with a menu entirely prepared by female chefs; on March 29, in collaboration with the WWF, will be celebrated the International Day of Forests 2020, which falls on March 21; Easter is celebrated on April 12th and spring is welcomed with the Easter Sunday Brunch with the theme “Alice in Wonderland”. Exceptionally, the brunch is also repeated on the occasion of Easter Monday, April 13th, in the natural park of the Rome Cavalieri.
At the Sunday Brunch of L’Uliveto children and teens have their own space. A kinder garden with games and entertainment (inflatables, make-up, drawing, video games) welcomes children together with activities for teenagers. The food is designed, prepared and served in a way that appeals to younger people with a buffet dedicated to them. Hotel Eden is teaming up with leading artisanal chocolatier “SAID dal 1923”, to bring you a delicious menu of biscuits and fine chocolates, all served on a trolley alongside irresistible hot chocolates and pastries created by Executive Chef Fabio Ciervo and Pastry Chef Ezio Redolfi.
